Now it is over 50£ a pound, or a 30 lb. pig sells for about $23. In earlier years, a pig would be butchered for the winter's meat for the farmer's family. This was preserved by salting it in a barrel. Hams were cured and hung up for future use. Nowa¬ days, we pack it in our deep freeze, and miss the flavour of good home cured ham. POULTRY Although only a few farmers in our area raise poultry nowadays, a barnyard with hens, geese and ducks was a common sight in years gone by. 22
