Factory from 1921—1923, followed by D.S. Ramsay who held that position for many years. Milk was brought on truckwagons, hauled by teams of horses, from farms in surrounding communities. Cows Were milked by hand, and the milk was strained into 15-gallon cans, which were cooled by placing in large tubs of cold water for overnight. After the morning milk- ing, all the milk was taken on a cart to a milkstand by the side of the road. From there, it was loaded on the truck- wagon and taken to the Cheese Factory. Later in the morning, the cans were then returned to the farm- ers with whey which was fed to pigs. (Whey was the liquid remain- ing after the produc- tion of cheese). On weekends, milk was held and kept in cold water from Saturday evening until Monday morning.
