Jean’s Take-out was built in 1970 by Ross and Jean Brennan. Its former name was the “Hitching Post”. The Hitching Post was located on the main highway just past the service station at Profit’s Corner on land leased from Carl Profit, and later it was moved to the opposite side of the road just past the Callaghan Junior High School. In 1980 Jean moved the canteen to Elmsdale beside her home on the Dock Road and changed the name to Jean’s Take—out. Some time afterwards Jean had pizza ovens installed so she could offer pizza along with her regular menu. Jean had many em- ployees over the years including: Carolyn Williams, Marjorie and Joanne Riley, Connie Perry, Lisa MacWilliams, Pam Wilkie, Claudia Collicutt, Kim Keough, Lynn Hardy, Sharon Gallant, Cindy Irving, Karen Yeo, Sharon McKenna, Peggy Adams, Darlene Matthews, Karen Matthews, Tammy Ann Gallant, Linda Oliver, Wendy
Hutt, Helen Hardy and Brenda Gavin.
